Aud-Cooks | Yeast Free Country Bread aka Iris Soda Bread

I love bread, I eat at least 2 slice of bread everyday. But It's been 1.5 years I have not eaten any because I found out that I am allergic to yeast.

I've been craving for white loaf bread recently, so I decided to make some to ease my craving. Sad to find out that white loaf bread does not comes in yeast free version, so I replaced it with Country bread aka Iris Soda Bread instead. Let's give it a try!


Ingredients:
3 cups whole wheat flour (preferably stone ground)
4 teaspoons baking powder
1 teaspoon salt
1 1/2 cups rice milk or water (works with any liquid)
1/4 cup liquid fat
(i.e. melted milk free margarine, vegetable oil, olive oil)
Some dried grapes
*Depending on the humidity of the air where you live you may need a little bit more or less liquid.

How to:
1. Mix dry ingredients. (Do not sift the flour!)

2. Mix liquids and add to dry. I used olive oil for the liquid fat.

3. Stir well. It may take a few minutes for the flour to fully absorb the liquid, so don't rush to add liquid or flour to it.

4. The dough should be moist but not sticky.

5. Shape into a ball or an oval, with oiled hands. Sprinkle sea salt and oregano for a foccacia flavor.

6. Place on clean baking sheet.

7. Score lightly the surface in a diamond or X shape to prevent splitting of the crust.

8. Bake for 40 minutes at 400°F.

40 mins later, tadah! Freshly baked Country Bread aka Iris Soda Bread!

Unlike white loaf that is soft and moist, Iris Soda bread is dense and dryer. You can have different variations of this bread. Example, for tea time you can add a tsp pure cane sugar to the dough. You may also replace the liquid with orange or other fruit juice if the bread is to be used for teatime and you can even add dried chopped fruits.

For a savory bread the liquid can be tomato juice and you can add chopped sundried tomatoes to the dough. Sprinkling of seeds in the dough or on top of the bread is also possible.

I toast it a little and layer some butter on it. Yumz yumz!

This is a country style bread that should be sliced thick. It is my first time making a bread, I believe I might had accidentally I rub the dough with too much olive oil hence the bread has a strong taste of it. Nevertheless, practise makes perfect. I will continue baking! Hope you enjoy it.

Aud-Cooks | Baked Potato with Cheese and Cream

Today let's combine two of my favourite- Cheese and Potato, together and make a dish out of it. Potato and Cheese can never go wrong, so this time I'm gonna try making the Baked Potato with Cheese and Cream aka Scalloped Hasselback Potatoes.

Aud-Cooks | Blackcurrant Mug Brownies


Ingredients for a normal mug:
- 1/4 cup sugar
- 1/4 cup all purpose flour
- 2 tablespoon cocoa powder
- a pinch of salt
- 3 tablespoons water
- 2 tablespoons olive oil
- 2 tablespoons of Blackcurrant Jam
*Alternatively you can add chocolate chips, or whatever you prefer.

How To:
- Mix all the ingredients until the mixture is evenly moist.
- Microwave it for 1 minutes 40 seconds.
- Best serve with ice cream.

Have fun trying different version of it.

Let's see what I've made this time. Homemade Tuna & Sausage Pizza! I saw this recipe shared by May on a facebook group I've joined and was attracted to it because it seems to be super easy! In fact, what really caught my attention was actually the dough, which can be made as flat bread as well. Plus, it's egg and yeast free! Got it? Means I can eat!!! Muahahaha!

All you need is 4 ingredients, easy!

♥ My Saturday Stroll - Prawns Aglio Olio 
It's cooking time again! Kareshi is a fan of spaghetti especially aglio olio and cream sauce ones. I've made him Creamy Tuna Spaghetti, so this time round I challenged Prawns Aglio Olio.

I forgot to take a photo of the needed ingredients for reference but no worries as the ingredients can be found easily.

Yeah! It's the second episode of Aud-Cooks. Recently, I'm really into cooking. Hmm, maybe not really cooking cooking but trying/ exploring different recipes especially those easy ones. I've join some foodie groups in facebook recently, and oh my you won't know what I am going through everyday! All the food they posted looks damn good and delicious, making me feels hungry all the time!

I stumbled upon an cheesecake ice-cream recipe from Kenneth the other day and decided to try it during the weekend! 


Aud- Cooks | Creamy Tuna Spaghetti

Wow! My first food recipe post! I actually started cooking when I was 8. 8!! Can you imagine a short tiny girl standing on a stool over the stove cooking for the whole family? Uhh... life was hard back then.

Now, I don't really cook for the family, mummy took her job back. Ha! She's managing her home-base nursery so basically she does all the cooking now, but from time to time when the mood strikes, I will take over the stove.

Kareshi loves spaghetti, especially creamy ones and his all time favourite Aglio- Olio. I cooked creamy tuna spaghetti for him once, it was my first trial (keep looking at recipe while cooking) but luckily it turns out good!

The other day, he was hinting me to cook for him again! I guess he really like my creamy spaghetti! lol, so I went to buy some needed ingredients and ready to stuff him up. Muahaha! Okay, ready for the recipe? Here it goes!

Satin balls

I have a dog, I guess many of you didn't know as I think I had never mentioned about it (unless you are my real friends). She is an adorable but naughty one. She was a birthday gift by a very very close friend 2 years back, and her name is Nini.

Nini is 2 years ols now, but right now she weight like feather. Because she almost died few months ago being infected by virus. It cost me a bomb to get her cured but its okay, as long as she is fine now. But ever since then, she is so skinny no matter how much I feed her. She just doesn't grow back. Sent her back to vet several times because of this.

The other day, when I was Google-ing, I came across these post about Satin balls. Satin Ball is especially good for emaciated dogs and dogs who won't eat, some even use it to put weight on their dogs before dog shows. It's high in fat so it puts on weight quickly, but it's also got other ingredients to make it a total diet so it can be fed alone or as a supplement. After a few read-ups and research, I decided to make her Satin Balls!

Few Saturdays back (20 April 13), I went to organic shop to search for all the ingredients that I needed and lucky me, I manage to get them, almost all of them except ready made gelatin.


There are several recipe available online, mostly the same but some tiny modification. This is the one I picked up (I modified abit on the measurement because I have problems in converting all the units so I just anyhow,lol! Measurement in bracket in what I found online).

Ingredients needed:
  1. 2.2kg (5 pounds) hamburger meat/ mince meat
  2. 300g (5 cups) Total whole grain cereal
  3. 300g (5 cups) Oats
  4. 100g (2 cups) raw wheat germ
  5. 150ml (3/4 cup) flax oil/ olive oil
  6. 150ml (3/4 cup) unsulphered molasses
  7. 5 eggs with shell
  8. 5 packets plain gelatine
  9. 150g (1cup) flax seed (optional)
  10. 1 cup ground carrot and its juice (optional)
Total damage is around RM 110.00. All organic stuff. Close up photos below.

5 eggs


Replacement of ready made Gelatin


Flax seed


Carrots

Because I couldn't get ready made gelatine, I got coral grass instead which I will need to slow cooked it with water to act as gelatine.

I cooked it with 700ml of water

But, before cooking it, soak it in water for 15 mins.


As I mentioned earlier, I have problems with the measurement of cups!! so I just... anyhow convert it to grams. Haha.. should be more or less there.


Measuring whole grain cereal

Added on olive oil..


Flax seeds..


The instructions said crunch it, but I choose to blend it.. so that its finer and easier to mixed up nicely with the meat.



Tadah~! Its finer right?


After blending all the dry ingredients, time to prepare the carrot juice!
 
I used 2 carrots to get a cup of juice.

I decided to mixed the meat with all the liquid ingredient first and last by the dry ingredients.

so here's the eggs and shells.. I smash the shells finer so that its easier for Nini to eat later on. You know, shells can cut, and she is small.



Mixed with the carrot and juice


It turns to this


Add in olive oil and molasses

Mix evenly...


Add in the coral grass or gelatine and mix well


Lastly, mix the dry ingredients! 
and tadah!! I prepare 120g for each serving and freeze them. Just thaw them as needed!
You may feed it raw. I tried feeding it raw to Nini the first day, but I think her stomach can't take it (she never ate raw before as I always cooked her food) so I stop feeding her raw, but slightly grilled it. Initially I was afraid that she will not like it as I always feed her dog and canned food, and she is very choosy!
But, its true.

ALL DOGS ARE CRAZY OVER SATIN BALLS!

When she was last weighted last Sunday, she is around 4kgs (I know, is so tiny!), lets hope that this satin balls will really make her grow!
