Aud-Cooks | Yeast Free Country Bread aka Iris Soda Bread
I love bread, I eat at least 2 slice of bread everyday. But It's been 1.5 years I have not eaten any because I found out that I am allergic to yeast.
I've been craving for white loaf bread recently, so I decided to make some to ease my craving. Sad to find out that white loaf bread does not comes in yeast free version, so I replaced it with Country bread aka Iris Soda Bread instead. Let's give it a try!
Ingredients:
3 cups whole wheat flour (preferably stone ground)
4 teaspoons baking powder
1 teaspoon salt
1 1/2 cups rice milk or water (works with any liquid)
1/4 cup liquid fat
(i.e. melted milk free margarine, vegetable oil, olive oil)
Some dried grapes

How to:
1. Mix dry ingredients. (Do not sift the flour!)
2. Mix liquids and add to dry. I used olive oil for the liquid fat.
3. Stir well. It may take a few minutes for the flour to fully absorb the liquid, so don't rush to add liquid or flour to it.
4. The dough should be moist but not sticky.
5. Shape into a ball or an oval, with oiled hands. Sprinkle sea salt and oregano for a foccacia flavor.
7. Score lightly the surface in a diamond or X shape to prevent splitting of the crust.
8. Bake for 40 minutes at 400°F.

Unlike white loaf that is soft and moist, Iris Soda bread is dense and dryer. You can have different variations of this bread. Example, for tea time you can add a tsp pure cane sugar to the dough. You may also replace the liquid with orange or other fruit juice if the bread is to be used for teatime and you can even add dried chopped fruits.
For a savory bread the liquid can be tomato juice and you can add chopped sundried tomatoes to the dough. Sprinkling of seeds in the dough or on top of the bread is also possible.
I toast it a little and layer some butter on it. Yumz yumz!
This is a country style bread that should be sliced thick. It is my first time making a bread, I believe I might had accidentally I rub the dough with too much olive oil hence the bread has a strong taste of it. Nevertheless, practise makes perfect. I will continue baking! Hope you enjoy it.
